Are you using Kosher salt? If so it looks like the salt is coming in around 1.5%, which is right up my alley.

Okay, that only bumps it up around 1.9%. I've seen some family recipes all over the board for salt. I might try a 5# batch to keep in bulk form for pizza and spaghetti sauce.
