Ok, for years now I've seen this paper like substance that people use to "wrap" their cappicola in, then tie, then hang to cure.
I've heard about it through friends and even seen it being used to make cappicola on you tube, but nobody knows the name of it or where to buy it.
Even on you tube, they can't remember the name. ( how convenient )

Anyway, does anyone know of or anything about this paper?

Maybe it's this "breathable" butcher paper..... I do know, my bacon keep drying when I wrap it in it, and place it in the refer...
 
No daveo, I don't think so, I "think" it's made of/or like collagen casings, I'm not sure, but it looks the same as collagen only in sheets.
I starting to think I'm going crazy, but I heard of it from a friend who uses it (but don't know the name)....
And seen it used on you tube for cappicola.
It's like a mystery product, but it does exist.
Someone must know of it.

That's it, funny all these years and I've never been able to find that stuff and it was right in front of me.

Funny thing about Sausage maker , if you go to the site its hard to find stuff , or it won't even show up . Google and it links to the sausage makers web site .

I always order high temp cheese if I'm in a hurry for something . That way it shows up in 2 days .

I just found those collagen sheets last week... Didn't know they existed either...
 
Well, hopefully we can get the word out now about this product, I for one will start buying and using from Sausage Maker.
