So my meat market ordered me a case of plate ribs.. I haven’t seen them yet but I am told they are 7 inches long.. I’m excited!!! Stay tune!

So I picked them up .. only 4.3 lbs cost me 18.00. Not what I wanted but ok
Went to Sams and bought a three pack of baby back
Here they are waiting for the WSM to get ready

Here we are 9:00 am in jackson nj it’s 42 perfect for a day of smokin and hanging.. Wife when out to a flower show with her sister. Now where are my cigars???

Five hours in babybacks came off wrapped in butcher paper and into the cooler. One more hour for the beef ribs
 
Here is the trick : take off the membrane olive oil Spg
First 3 hour naked on the grill no water pan next 2 hours. Naked on the grill
Final hour naked on the grill .. wrap in butcher paper and put it in a cooler
Four and hour..
