So I bought a 8 lb pork belly from Sams
Three weeks ago.. used salt , sugar and maple sugar and some #2 pink.
Doubled bagged it an into the fridge it went.. I flipped it twice a day
Here is what it looked like when I took it out.

Nice and firm. Then I added the magic. I injected it with pure maple syrup in a 1 inch grid pattern maybe I used 5 oz. It really plumped up

I’m using the old H2O smoker like a UDS
I took the water pan and turned it upside down and took the charcoal pan and put it on top. Next my 12” tube
(Thanks Todd) filled with cherry pellets

So I took two of my kabob skewers am bent them into a hook and took a third skewer an used it as the anchor . Put it threw the belly , threw the grate and now I have a mini pit barrow Cooker .
I think I paid $29.00 for it!!

I think the tube will last 5 hour. Maybe I will do another after that. It depends on how much Scotch I have lol
