My Local Sam's Club here in NE Ohio has Prime whole briskets on sale for $2.68/lb. They also have "choice" whole briskets for $ 2.48/lb. I picked up two 16 lb. primes and a 19 lb. choice which honestly looks every bit as well marbled as the primes.

Check Sams.com for pricing in your area..

I miss Sam's Club. Costco and Smartchoice Foods are our only warehouse type stores here. This is why I started buying whole animals until I get my own farm up to speed for meat production.

Guys, that's a good price for prime, and I've had excellent results with Sam's. Below is a prime point I did a competition trim on . The fat ratio was unbelievable. Here is a tip if you go to Sam's and want to wet age one..... Tell the meat cutter you will be wet aging and need a brisket from the walk-in that it still in the case, because you must know the kill date (or pack date) which is on the label on the end of the box. They will usually bring a couple out for you to choose from. You pick the one(s) you want, and they print a label and you are good to go. Since you know the pack date, you can safely age it for up to 40 days, 26 to 30 days is my sweet spot. This adds an extra level of tenderness and flavor. Say they have some that were packed 12 days ago.... you must subtract 12 from the 30 days of wet age. But the kicker is, during those 12 days the brisket has been in the walk in at the perfect temp.
