So I had two cans of salmon and decided to smoke a loaf. Mixed with two eggs, half cup of bread crumbs, frozen mirepoix mix (onion, green pepper, celery), and Old Bay seasoning. Put into a corningware dish to mold. Smoked at 250, with a smoke tube, til it was 145 internal. Glazed with a remoulade sauce I put together and went another half hour or so. Turned out great. Didn't realize that the salmon was already cooked but didn't matter in the end.

Interesting idea, I might have to give that a try for the something different category. I know canned salmon used to be fairly inexpensive but I haven't bought it for years. Growing up my grandparents used to have it around for snacking on with crackers right out of the can or slap some on white bread with a little butter and every once in while you get a little extra texture from the little bones that just break up

I think we have three cans of salmon from Costco. Wasn't sure what to do with it. Perhaps we'll give this a go.

I keep canned salmon, tuna and sardines on hand for quick meals or just a snack. I have not a salmon loaf for years, but salmon patties use pretty much the same ingredients.
Right. That's what gave me the idea. Like hamburgers and meatloaf. Same ingredients, more or less, just different shapes.
