I have become sufficient at making kit sausage, but I've reached a point of boredom with the lack of personal flare and would like to know if anyone had some insight into some baseline seasoning recipes that I could make my own namely pepperoni and salami, but anything would be nice. Also I understand from what I'm told that salami is a fickle mistress and would love any pointers on my first salami endeavor.
