Well, I'm going to dig this thread up again. 

Pops, that sounds like the sausage my father used to make.  Thanks for posting it.    Simple and outstanding sausage!    I'll have to agree,  Sausage ain't sausage without sage.  

He would grind it (I got to crank, being the youngest)  spread it out on the table and season it and mix it.  Fry a sample on the cook stove until it was just right.   Man I miss those days.  Life was so much simpler then.
