Making them tomorrow. One side will be potato salad.

Ideas for a second side?

Usually have sauerkraut, red cabbage or dumplings

I don't care for Brussel sprouts.

Probably go with a simple cucumber salad.
A bean salad, Bohnensalat, also works for this. We usually have that with Frikadellen. You can use canned green beans. Works well for this. We don't use bacon.
 
I have always had it with dumplings and plenty of gravy. Have not made it in a long time- shame on me! I think it's my daughter's favorite meal and I have not made it in ages. Time to remedy that. Thank you for your process.
 
I had to look up beef rouladen. Wow that sounds good. Watched Chef John make it. That will be going on the list to try.

Made some drastic changes to the side dishes! Was out of vinegar, so no potato or cucumber salad.

Went with kraut and gnocchi.

Tasty meal.

In for this. Heard of it but never had it. For some reason, my mind is telling me to make it as meatballs or meatloaf instead of rolls. That said, if I do run run it as a roll, I am chopping the pickles or using slices and taking it easy on them.

Looks STELLAR @bill ace 350!!! That looks about EXACTLY how I would run these as a roll! I am REALLY curious how the bacon ends up like texture wise.

Thanks! Bacon gets fully cooked but no crisp. It is soft but not chewy, if that makes sense.
 
They are very good. I would suggest just doing a couple with pickles. And a couple without. I'm not a real fan of them with pickles.
The pickles seemed out of place when I first made these while living in Germany. They eventually grew on me. I prefer sour pickles over sweet. I used homemade pickle chips instead of spears. No real difference.
 
That's a great looking plate . Always wanted to makes some , but never have .
