I just purchased a scratch and dent Master Forge, verticle Propane Smoker. It did not come with instructions. I have never owned or use a smoker before and have many questions. It has been seasoned with Pam Spray and hickory wood, which was actually smelled awesome! Here are my questions:
1. the wood started to turn to charcoal and burn. should I add more wet wood?
2. how much wood should I use?
3. how long should the wood soak? (the packet of hickory chips instructed at least 30 min. but since I was just seasoning, I went minimum).
