Lots of good reading here on both wings and butts.

Butts: can take up to 12 to 16 hours . But worth it . Take it to IT of 200 to 205 for pulled pork. I like to smoke them in a pan or a pan under

to catch the juice then defat the juice and pour back over the pulled pork . After the IT of the butt reaches 160 you can wrap in foil. That will

help it get to 205 faster.

Wings   Can either brine the wings for a few hours or inject them. Here a link that shows how to on injecting them. S2K9K"s injected wings

If you don't want hot sauce injected in them I have done butter/garlic mix.

Well I didn't know we were suppose to give a little Bio on ourselves so here goes. As i stated earlier my wife gave me a Masterbuilt XL smoker for Christmas. I'm from Shawnee,KS. 44 years old. Have a 3 year old (GOD help me) beautiful little girl and cannot wait to start drinking....errrrr I mean smoking. Have absolutely no experience and have been getting several ideas from "smokingpit.com". Great how to videos there.
