100 percent rookie here. So, be easy on me. Hey guys and girls. I recieved my new MES smoker yesterday and seasoned it and immediately made a brisket. Thanks to alot of help from the boys in the chat area last night. I have pics and I will upload them as soon as I figure it out. I am a total rookie at smoking. I think it came pretty decent. We bought a 10 pound brisket, cut off some fat. Mrs Score bought a store bought rub(not bad). We rubbed it. Tossed it in the smoker at 10 pm. Fed the mixed wood chips in. Let it cook all night. This morning, 6:30 am, when it hit 165, I wrapped it in foil. Poured some soda in the foil. Took it out when it hit 190. Let it sit in the foil on the stove to cool for an hour. I also poured some of the juice from the drip pan in the foil. Had to run out. So, I put it in the fridge. Came home at 8 pm tonight. Sliced it cold on the electric slicer. Just had a few cold slices. Seperated it into packages. Put them in the freezer for a future date to eat. It tastes pretty decent. Mrs Score and the kids love it.
