Hey everyone, my name is Tom and I've joined the group today.  I'm from Ontario Canada and as you can see from my profile picture, I'm an endurance horse racer.  The picture is actually taken at the Old Dominion 100 mile endurance race held in Fort Valley Virginia.  I actually started smoking meat way back in my early 20's when I worked at a local meat packing plant - being of Polish decent I have always had a keen interest in not only making my own sausage and meats but the art of smoking. I have a weber smokey mountain smoker that I use very regularly and also a couple years ago I built a cold smoker. I'm fortunate to own a lovely farm where I have access to all my smoking wood - apple, cherry, hickory, maple and oak. Looking forward to interacting with the group and learning new and different ways of smoking.
