Great meal David!! I've had doing a ground chicken fatty cross my mind a few times lately. Gonna have to move it up the list now.
 
I like it extra because I started going for meatloaf and ended up with fatty in a pan, or cheese stuffed meatloaf. Whatever, won’t be as pretty as yours but still looking forward to it. 2 pans on the smoker right now.

I finished that jalapeno jelly from last year. Man that stuff good. I getting ready to make some. I do mine sugar free but they still taste great! Great recipe!

I also have couple Jalapeno plants growing on the deck, they are not ready yet.
I hope I find time to make my preserves this year . As all the fruit trees and grapes are doing really good this year. The pear trees are just packed, and also the grapes are packed.

That jelly would have made a great glaze on the meatloaf........ yum

Very nice of you to say, it was fun to get at it again and have a few hours to just relax and cook.
And the thumbs up from the ladies here was nice also.

And the loaf was great with the noodles and a couple sandwiches from it also.

The fattie was really nice , but I like the chicken idea , with a nice crispy crust or glaze, I bet that would be nice.
What were you thinking for the innards ?

The cut shot was good with all the mozza, and yes the stuff and roll worked good with the parchment paper.

I sliced it when it was chilled later at about 1/4' for a couple cold and fried sandwiches.

It was a brute of a meatloaf, just over 3 pounds of meat , then the innards and cheese.

And the sandwiches were the best, 1 cold and the next day a fries one . Great.
