Rolled Stuffed Meatloaf ( fattie if you will ) with mushroom gravy Stroganoff

It has been a bit for a post from me, so had some time the other day and told Mona I will do up supper.

Couple packs of my Maple back bacon, onions, celery, red and green bell peppers, saute all in the cast pan.
mix up the hamburger ( 1.4 kg or just over 3 pounds ) with couple eggs , cup of panko and 1 1/2 tablespoon of MC Holy Gospel AP rub .
Rolled out on parchment paper to 16" by 11". Spread the cooked mix on top and a layer of mozza on top of that.
Roll the loaf up and wrap in foil and into the freezer for about 45 minutes to help hold its shape while I get the Q and smoker tray going.

Q is at 300 +/- deg with Cherry chunks and Hickory chips.

You can just see the light smoke from the tray.

While that is going i started up the Stroganoff noodles and the gravy, fried up some of the same veg and mushrooms ( took out some of the mushrooms so mona could add to hers , as I did not want that much in mine , lol )

Made a glaze of Soys , ketchup, br. sugar and vinager. gave the loaf about 3 coats in total in the last half hour.

added the noodles to the gravy and sour cream and some mustard for the tang and extra flavour.

everything is ready and now slice and see the innards, nice

sliced it up for the ladies and plated up mine.

Very nice and only had light smoke witch was like by 2, I wanted more smoke. They win of coarse.

Thanks for looking , and it was very nice , and yes i did have a couple meat loaf sandwiches that night and the next morning..... love cold and fried meatloaf sandwiches.

The cut shot was good with all the mozza, and yes the stuff and roll worked good with the parchment paper.

I sliced it when it was chilled later at about 1/4' for a couple cold and fried sandwiches.

Holy Cow that looks incredible! The color you got on meatloaf is awesome. The noodle also look so good and you know how I love tomatoes.

The glaze on the golden meat was very nice and kept making it darker each time I added it
and I love me some Stroganoff noodles.
Our tomatoes are not big enough yet to pick , but soon. So they are store bought but very tasty.

Very nice of you to say, and it was a very nice meal for sure.

I am trying to play catch up on some ( lots ) posts I missed, and I know you have yours in there and always a pleasure to read yous for your crowd you always put up a great smoke/cook for sure also.

I finished that jalapeno jelly from last year. Man that stuff good. I getting ready to make some. I do mine sugar free but they still taste great! Great recipe!
