Rice n' Beans and Leftover Pulled Pork

I wanted a throw-together meal tonight that would last thru Friday. Out to the freezer to grab a pound of pulled pork. The result was pure comfort food.

Rice n' Beans with Pulled Pork
Created this on a whim and it was fantastic. Easy throw together meal with leftover pulled pork, or pulled pork from the freezer.

Ingredients
8 slices thick cut bacon, chopped
1 large onion, chopped
6 cloves garlic, chopped
1 pound pulled pork, dry (no sauce)
16 ounces smoky au jus
16 ouces water (can replace au jus/water with 4 tsp Better than Bouillon beef and 4 cups boiling water)
1 ½ cups brown rice, uncooked
7 ounce can diced green chili's, undrained
14.5 ounce can diced tomatoes, undrained
1 Tbs cumin
1 Tbs chili powder
1 Tbs brown sugar, or organic coconut sugar (best)
1 tsp salt
½ tsp cayenne pepper
19.75 ounce can La Costena whole black beans, undrained
1 Tbs sour cream or Creme Fraiche garnish per bowl.
¼ cup cilantro, chopped, garnish per bowl

Directions
Place bacon in a Dutch oven and fry until starting to crisp.Do not drain fat.
Add chopped onion and garlic, stir and cook until just before tender.
Add the pulled pork and uncooked rice. Stir to coat with fat. If meat was cold, cook until warmed.
Add the liquid, chilis, tomatoes, and seasonings. Stir to blend.
Cover, bring to a simmer, and cook for 50 minutes.
Add the beans, stir to mix, and cook for 5 minutes.
Taste for salt.
Bowl, garnish, and serve.

Makes 8 servings. 300 calories per serving, garnish extra. 30g carbs, 22g protein, 8g fat, 4g fiber.

Thanks, Jake. I wasn't in the mood to cook tonight, and this kind of came together as I looked in the cabinet and freezer. I call them throw-together meals because you can start in one place with no prior prep and just keep throwing things in the pot.

From a meterology versus calendar standpoint, the first day of Fall was yesterday.
However, you couldn't tell that from what they're forecasting for my neck of the woods later this week. We will be under excessive heat watches again.
Usually, I start thinking about whether or not to convert the patio over from evap coolers to heaters. Not this year.
It has been the hottest summer on record down here.

This made my mouth water! Doesnt have to be fall to eat some good warm food I'll sit under the A/C and pretend its fall . Thanks for sharing. Can't wait to try.

That looks real good to me, Ray. I would have really enjoyed it today. Nothing like hearty and warm comfort on a fall day. It's fall here. The leaves are turning and starting to drop, and the mornings are getting fairly cool. I'm up every morning by 6 o'clock and for the last few days now the furnace has kicked in.

Leaves are turning here also, and the daytime temps have been in the low 70s night time temps in the 50s. I actually got under the covers the other night.

Ray that dish looks great. Throw in a nice warm biscuit and I'd be in heaven.
