I wanted a throw-together meal tonight that would last thru Friday. Out to the freezer to grab a pound of pulled pork. The result was pure comfort food.
Rice n' Beans with Pulled Pork
Created this on a whim and it was fantastic. Easy throw together meal with leftover pulled pork, or pulled pork from the freezer.
Ingredients
8 slices thick cut bacon, chopped
1 large onion, chopped
6 cloves garlic, chopped
1 pound pulled pork, dry (no sauce)
16 ounces smoky au jus
16 ouces water (can replace au jus/water with 4 tsp Better than Bouillon beef and 4 cups boiling water)
1 ½ cups brown rice, uncooked
7 ounce can diced green chili's, undrained
14.5 ounce can diced tomatoes, undrained
1 Tbs cumin
1 Tbs chili powder
1 Tbs brown sugar, or organic coconut sugar (best)
1 tsp salt
½ tsp cayenne pepper
19.75 ounce can La Costena whole black beans, undrained
1 Tbs sour cream or Creme Fraiche garnish per bowl.
¼ cup cilantro, chopped, garnish per bowl
Directions
Place bacon in a Dutch oven and fry until starting to crisp.Do not drain fat.
Add chopped onion and garlic, stir and cook until just before tender.
Add the pulled pork and uncooked rice. Stir to coat with fat. If meat was cold, cook until warmed.
Add the liquid, chilis, tomatoes, and seasonings. Stir to blend.
Cover, bring to a simmer, and cook for 50 minutes.
Add the beans, stir to mix, and cook for 5 minutes.
Taste for salt.
Bowl, garnish, and serve.
Makes 8 servings. 300 calories per serving, garnish extra. 30g carbs, 22g protein, 8g fat, 4g fiber.
