Thanks Winter.....beef ribs coma is just the warm up coma for this week.....next up Carne Asada over wood coal fire, twice smoked carving ham, then a point brisket, then a rack of pork, then to usher in the new year a pork belly 5 ways and we may sneak in a prime rib......oh and a 2 - 3 mile run each day!!!!.....just so we can stay awake though it!

Very nice Civil. I love smoking and eating but am unable to eat it as quick as I can smoke it....or the other problem I run into is the darn freezer fills up....:emoji_open_mouth:

Waiting.....:emoji_sleepy:

It’s a rare thing that I have the free time to smoke this much in a row but this is one of those years so I’m just going crazy!!!! However, I have to say my wife has created me a full menu and time table for each meal so I”ll just be in production mode.....I’m a lucky man!!!

Also, the way I see it is even if we only get one meal out of each it is still cheaper than a trip to McDonalds for burgers and fries these days.........

they looks delicious, they can keep their chestnuts give me the beef!!

Thanks! We will be doing chestnuts in sausage & fennel dressing that will a side for the rack of pork!

Smokerjim, here is the recipe. My wife got it from a free William Sonoma’s store thanksgiving handout and we have customized it a bit, so I’m happy to share it. My wife now makes the focaccia from scratch and that has taken it to another level. I also make our own turkey stock......so it takes two days to make but it is THE fav on Thanksgiving!
