It being Fathers Day and all, wife asked me a few days ago what I wanted for dinner tonite. Said I have a couple racks of baby backs in the freezer that are desperately crying out meet my MES.
Broke out the ribs, rubbed one down with Meat Church Gospel (on the right)and the other with MC Voodoo (on the left) and im the fridge they wemt for an overnite sit.
Took them out about 1230, to let them come up to temp while the smoker was heating up. Hit 250 about 115p after some fiddle farting around by and in they went.
They sat in a smoke made from hickory chips and bournon barrel char from a bourbon distillery near home in VA.
Sat outside for a bit enjoying the smells coming from the smoker
Wife also had the idea of poppers, so mixed up some cream cheese and fiesta blend cheese, filled some halved and seeded jalapenos, wrapped them in bacon and gave them a sprinklimg of the Voodoo as well.
Bout 5p bumped the smoker up to 275 and im went the poppers. Checkdd the racks about 530 when I added more chips and char. One rack was done, other was close. Pulled the done rack (Gospel) and wrapped in foil.
The other rack (Voodoo) sat in the smoker till about 550p, pulled them and wrapped those in foil as well and briught them inside. Poppers needed that a couple more mins. When they were done dinner was on. Ate way too much.
