Almost 5 hours in on the ribs. Just applied a neighbors homemade sauce with some of the extra pineapple from the beans. 2nd try on ribs, the first one was pretty much a flop.
Just keep doing them , it gets easier to know 'done' . Besides the test results can be eaten , or at the very worst , added to Chili or as seasoning for Beans , Cornbread , Soups and Stews and such !!!
Supper was great! Much better this time. Maybe could have cooked a little longer, learning the feel of the toothpick. Highly recommend Dutch's beans, I scaled it down and varied a little, but as a guide it's an outstanding recipe. Was a nice day here, worked on splitting and stacking some of this load of firewood and checked the smokers when on break.
dirtsailor2003, I think the first time the main problem was a terrible choice of meat. I picked up a couple of tiny packs, St. Louis cut, for just my wife and I. They should have never been offered for sale in my opinion. I could have held all the lean meat on both pieces in one hand, all the rest was fat and bone. This time I got bigger pieces, baby back, thick and meaty, We had leftovers enough for tomorrow.
