Ribs are on smoker. Seems the MES is about 10 deg off. I'll post more pics through out the day. I used famous Dave's rib rub. Anyone ever used that rub pls comment.

My first smoke with the MES was a pork loin slathered with yellow mustard and Famous Daves rib rub and I liked the way it tasted. A few sweet elements but nothing too overbearing, and I would likely use a bit of cayenne pepper in the next mix to get a bit more bite. I've used BKW Seasonings BBQ rub for grilling in the past, and it is one of my favorites for pork.

  I haven't tried the Famous Dave's rub - would you use it again? & my MES 30 is way off - it runs about 22 degrees hotter than I set it on average. I use a Maverick ET-732 to keep track of temps. Nice smoke

Yes I will use the rub again. I'm going to smoke 2 racks of baby backs this weekend.
