Hey folks!  I had to work on Saturday, so I had to squeeze my weekend cook into Sunday.  It consisted of extra meaty baby backs on the WSM


Spatchcocked chicken on the kettle,


and redfish court boullion(coo-be-yawn) in the dutch oven


It was a good day!

Thanks Al!  My better half loved the redfish, and I thought the ribs were great.  Tonight I'll try the redfish and the chicken will have to wait.  I appreciate the point!

Note to self, and promise to better half:  will not cook jalapenos in a skillet in the house again!

Redfish and Yardbird looks great... Another Point.
Thanks again Chile!  The chicken is your idea that my better half can't get enough of.  Is smoked paprika spicy?  I added a touch of cayenne and black pepper, but a nice amount of smoked paprika, the woman says it's too spicy!  What could it be?

Yes a fresh, quality Paprika is going to have a spiciness/heat to it.
Spanish is considered sweet and spicy, Hungarian is hot and any kind can be smoked.

I'd cut the black pepper out, halve the Cayenne (hot) and go light on paprika.
Add cumin, a pinch of oregano, maybe some cilantro and a squeeze of lime.
Very nice Southwestern flavor profile.
