St Louis ribs were way over done. They went 5.5 hours at 225 -250. Should have trusted the thermometer

Thanks! I think they got up to 209 then I brushed on some BBQ suace. Had them for left overs just now and everything was so good? I prefer BBQ food the next day. The ribs were pry the best I've made. Used a rub I got for my birthday and it's really good. Didn't foil or spray anything while cooking. Just olive oil and rub.
 
Those ribs look pretty darn good to me!

Cool thanks Al! Did some little Dino ribs yesterday. They took 5 hours at 250. Biggest one was 2 1/4"
