Hi all,

I live in Rhode Island and work full time as a retail manager and go to school full time as well. This does not leave much time for an all day smoking session but I try to fit it in when I can. I have tried to smoke brisket a couple times and even though it tasted good it has always been a little dry. I have also smoked some beef ribs once which turned out amazingly. Because I live in an apartment my current smoker is a charbroil charcoal/gas grill. I set the charcoal on one side of the grill and place the meat on the other. I have typically used hickory or mesquite chips soaked and placed in tin foil with a slit over the top. Due to the size of my smoking area I usually get a brisket that is under 10 pounds. I have used chili rubs on it in the past with a homemade chili powder coupled with a mopping sauce.

Welcome to SMF! We are glad to have you! There are a lot of great people here more than willing to give you advice. There are a lot of threads on brisket, just use the search tool at the top, and you will find a lot of help getting it moister for you. Brisket is a tough one so I hope with the help here you can get it to your liking.
