Reverse Seared Pork Tenderloin

Didn't have time for a full smoke this weekend, but I did manage to steal a little time to cook up a pork tenderloin for Sunday night dinner. No before/during cook pics but a good looking plate for the after.

Grilled over charcoal at low heat until it registered about 135-140 IT, then build up a big coal bed and seared hot and fast to finish it off. I had seasoned it with Meat Church's Honey Hog Hot rub, and the sweet/spicy/charred combo worked really well. Served with some simple dijon black pepper green beans and a salad on the side. Don't have our move finished yet so we are eating on a box with a blanket as a table cloth haha. Quick and easy after a busy weekend!

That plate looks right up my alley. I would need at least 5-6 more slices of tenderloin though!
