Well I THOUGHT I was done with cheese sandwich posts...
But then turns out Friday was a Solemnity, so our family got to eat meat, so couldn't pass up the opportunity to at meat to our Friday cheese sandwiches!
This week I opened what was supposed to be a 4 month old Manchego, but the make went poorly, took forever to dry and developed a washed rind. Flavor was good but wrong for the style and texture is terrible, crumbly and gets stuck in the throat. Went into the press with too much whey and developed to much acid in the cave.
But... IT MELTS!
Sliced a ball tip roast very thin on the slicer, added salt, pepper and celery seeds. Smashed into patties and started grilling the gluten free focaccia.
Melted since cheese on the side.
Flipped the cheese over onto the patty.
Finished sandwiches. Peppers and onions were added on the plate.
