Looks like you took not only the skin/rind off but all the fat as well. Oh well mistakes happen and as long as it tastes good, I'd eat it in blts or add to other dishes.
I leave the skin on during the curing and smoking process, after smoking the skin dries out and becomes fairly stiff making it very easy to remove with a sharp knife.
