So when I shared my back bacon album with some friends on discord my German friend <who is some thing of a health nut> was impressed and said if he didn't have access to so many small shops, he'd be seriously considering doing his own sausage etc to avoid heavily processed foods..except Erbswurst.

Now I've known about Erbswurst for years; I've kept an eye out for it and suffice to say, I don't think I'll ever find it to buy. <Knorr makes it, but I've never seen it on amazon..and I don't trust ebaying food from overseas>.

Has any one else ever made this or found a way to buy it in the US? I have seen a few online recipes and this one seems to be likely the best candidate to do at home; https://www.meatsandsausages.com/sausages-by-country/german-sausages/erbswurst

I don't know why but I've always wanted to try Erbswurst. Now I was thinking if I did this..I'd probably use summer sausage casing instead of 40mm, just because I like thick pea soup..as for hard fat. I haven't seen that sold around me, but I'm wondering if I keep trimmings from a brisket if I could use that?

Well, maybe some one here has done it and can chime in. It's at this point just some thing that popped in my head. Another 'And now I need room for that' thing.
 
Whie growing up in germany my mom would make this using knorr erbswurst in a tube. Made a soup of it and added franfurters to the base. Ive tried the recipe you listed and it comes close, more bacon flavor than knorrs as they only use 6% bacon, a bit spicier and more savory....recommed trying.

Awesome to know! I know the Knorr stuff is pretty much a powder and like ramen seemingly lasts forever. This I'm guessing will not. <Do people really..just eat this as a snack? Seems odd to cut off a piece of this for a snack!>
