Redfish!

So when Hurricane Ida came through the marsh, it went right over the area I fish for redfish. Changed the area drastically....all my redfish spots changed. The submergent aquatic grass beds got wiped out....and where there is grass-there are crabs. And crabs feed the redfish! I have been looking for grass beds over the area for 2-3 years to no avail!! That is until this past Saturday!!!!

Found a new spot....Good times are back....and fillets are back in the rotation for meal nights!


Can't tell you how much fun we had that day. It was a reunion of sorts....us and the redfish. Man I have missed those explosive topwater strikes!!! Everything was right with the world for sure. My summer fishing prospects have just gone up quite a few notches!! We should be back in the saddle now!!

Monday was dinner night. Simple meal of pan sauteed redfish fillets with a Beurre Blanc sauce, garlic and bacon wilted spinach, honey sriracha sweet potatoes...

Wow Was that meal good!! Served with a Vin Soave white wine, one of my favorite whites. Another dinner night Thursday. I am looking forward to it!!


Oh- Spalla Cruda wrapped canteloupe with honey and balsamic vinegar for the hors d'oeuvres.

That is fantastic! Redfish taste sooo amazing. A Tex-Mex restaurant near me used to do char grilled Redfish Fajitas seasonally and it was one of my favorite dishes of theirs. To bad they stopped that many years ago. I order redfish anytime I see it at a restaurant, it's such a tasty fish!

I miss Fish Fishmongers in Plano. They had the best Blackened Redfish and that bread pudding was to die for.
 
That looks amazing! I have always wanted to fish for and taste redfish, heck almost any of the different species you folks have down there. I get the doldrums of go to spots getting wiped out, that happens up here with our small bodies getting absolutely pounded and fished out every few years. Not sure what happened to my go to locations for nice bluegill's but they have basically disappeared, one was over fished for sure the other I haven't quite figured out because in the past it is notorious for tuff fishing for some people but I suspect it is over fished as well.

I bet it was good! I remember the place but never tried it as it was not so close to my side of town but seen it plenty of times driving to and from Cabelas there in Allen :D

Someone might have tossed a pike or two in there. The state put pike in some of the waters here in Colo. to eat the sucker fish, not thinking the would also eat trout. Someone tossed in some perch hoping the pike would eat them instead of the trout. Now there are more suckers and more perch than pike or trout.

Redfish is a firm white flesh fish. Excellent for the table. And yes, I am sure glad to have found them again!

Heck yeah. Glad to hear they're back. Meal looks incredible too 👍

Love the red fish. Limit of one 18" to 27 where I fish Florida. Just bought a new fishing shirt.

15"-23" here, but 1 can be over 23"...limit 2 fish...

The state changed the limits here from 5 to 4 fish per person, and from 16-27" down to 18-26" slot. WE threw back some under size fish 17-17 3/4"...that was hard to do...let me tell ya!! LOL!!! But I get the reason for the changes; to replenish the breeding stock offshore.

The one I know is not from pike of other, there are good bass in there but it has always been a bass and bluegill lake. Now the perch are way more prevalent than they ever were. The other lake has really seen an increase of dinky perch and the stocking reports does claim musky were stocked and I would say shortly after that the gill's got fewer and the nice crappie are 9in max the last few times I have ice fished it. I think that a lot of it is the small sized bodies of water and high fishing pressure with the nice couple of winters we have had.
 
Looks fantastic Keith! I'll be those appetizers were off the hook good too. I've never had redfish is it a mild firm flesh fish? Glad you found a new hotspot finally.

Thanks Jcam! Yes, redfish is mild as long as you remove the red line under the skin. They love to eat crabs so yes, the flesh is mild and sweet!

Now, that is awesome you found a spot again for the redfish… and let me say… that meal all looks phenomenal bud! The whole meal has me just salivating! Though I think I could happily make a meal on just the app alone! Well, maybe a redfish as well! 😉

Thank you Rafter! I was so happy to see the grass again....I just knew we had found the fish again! And I was right!!

When the first two fish came over the gunnel of the boat, I told my buddy..."well, that is one meal night!" Then we caught the 25 1/2" redfish. And I said, "That makes two meal nights!" Then we put two more in the ice chest... I said, "That makes 3 dinner nights!!"

Meal was excellent tonight! Sunday we are doing crab and redfish cakes... I am looking forward to it!!!
