That looks good. I think a little smoke would make them better
 
I don't know. I've had the mix before. I know it says the sodium is reasonable. But with the mix for the butter. It was too salty for me. And I like salt. If I made this. I wouldn't use the seasoning packet.
 
Mixed them up last night, and refrigerated. Decided to go with the oven, as my condo already smells pretty smokey from the cheese yesterday. Had to run the frog mats and utensils through the dishwasher twice.
The mixture made 45 ping-pong sized balls. Really good! Sodium level is fine for me. I'll definitely be making these again soon.

I showed this to my wife and she thought the garlic in the biscuit mix would be too strong.

There is no added salt, except for what's already in the mix, sausage, and cheese. Jimmy Dean's sausage is too salty for me, so I used some store made hot Italian. Seemed fine to me. Got lots of compliments when I brought it to the pub for the Seahawks blowout of Arizona.

Those look great! @chopsaw my wife makes these every Christmas.

I like the idea of Italian sausage quite a bit. I dont mind Jimmy Dean, but we used it for decades, I just need to convince my wife to change the sausage up.
 
I'll include the "recipe", in case the video went by too quickly.

1 box Red Lobster biscuit mix, w/ seasoning packet
1 lb. hot pork sausage
8 oz. cream cheese (room temp)
8 oz. shredded cheddar cheese
1 can Rotel diced tomatoes (drained)

Mix, roll into balls (ping pong to golf ball size). Place on sheet pan covered in parchment paper.
375° for 25-30 minutes.
