Rainy day leftover pork

Took the week off to unwind and it’s raining today. What to do with a ton of smoked pork left from the weekend ? Had a few other odds and ends to use up. Time to create something new today. The vertical pork stack tastes great but was difficult to capture a pic that did it justice. Layers are a roasted portabella mushroom , smoked pulled pork, sharp cheddar and bbq sauce, fried green tomato , more pulled pork and bbq with sharp cheddar and finally topped with home picked red onion and a sprinkle of cilantro. Same items on the other pic in a more traditional plating. Tomato is breaded with almond flour, coconut flour and Parmesan to keep the entire dish keto.

Looks like a seriously good lot of food and those fried tomatoes are awesome!
That pork stack looks to me like someone has been doing some serious "unwinding" ;-)
The tomatoes came out pretty darn good. Gonna slice a little thinner next time.

Thanks! The “creativity” had a lot to do with the fact I had to use up some odds and ends. The green tomato I bought just because I knew it would fit into some dish before it rotted lol. The portabellas were for a burger contest I meant to enter over the weekend. Got busy gardening and didn’t get that done.
