Found some beef rib plates at Sams club... Woke up to rain and moved the smoker to the back deck to fire up...
2 racks on....

These are about the longest beef rib bones I've ever bought.. Almost 11"

The color is nice under the membrane once pulled off....

A little too fall off the bone, but it's still brisket on a stick..
