Since I worked a half day to attend a funeral last week and was home a couple hours earlier than normal, the wife elected me in charge of dinner.
A quick trip to the store to see if they had any meats in the bargain bin proved a failure, so a pork tenderloin and asparagus was grabbed.
My wife around Christmas time went a little nuts with her sister and bought a $#!+ ton of Spiceology spice blends. She is into the trends and she has fun, so all good, but I feel the majority of the blends are over priced. I have found a few gems I would order again, as I've been working through the flavors. That night I thought let's try some Smokey Honey Habenaro, and since my boss gifted me a fresh bottle of honey leftover from his wife's hive harvest last fall, I decided to incorporate that as well. So I rubbed the tenderloin with honey and then coated in the spice blend. This went in to the pellet grill on smoke for an hour, followed by an hour at 180 and finished for an hour at 225, pulling when it reached an IT of 143, and rested for 20 minutes. While the meat was smoking, I made some jasmine rice and incorporated some chopped onion in it.
As the meat rested, I roasted the asparagus with some onion, drizzled with some EEVO, a dash of salt and a healthy dose of Spiceology Purple Haze.
I would not rub the meat again with honey as it seemed to limit the smoke penetration, I usually achieve a pretty prominent smoke ring, anyone else ever experience this with honey rub? The Spiceology Smokey Honey Habenaro was just okay imho, had a little dry heat, but not very hot. It needed a dose of salt, something I have discovered with alot of their blends. The wife liked it a little more than I. The veggies turned out excellent and I would highly recommend the Spiceology Purple Haze, this is one of their gems. It is made from beet and carrot powder, and a few other ingredients. It has such great contrast to the cooked onion!
The next day I took the leftovers and chopped them up a bit. With the addition of a little sesame oil, soy sauce, and an egg from one of the backyard chickens, it made a pretty tasty fried rice.
