Quick Safety Question: Need advice quick!

  1. I checked the radar tonight and it was clear.  Prepped some cheap chicken legs for my WSM.  Fired up the smoker and we had some pretty nasty pop up storms.  Got the smoker up to 170F and put the chicken on before the next wave of storms set in.  It cruised from 170-190F for about 1 hr 30 min before I could get another load of charcoal in once the storms resided.  It's now at 250 and holding.

    My question...will that 170-190 for 1 hr 30 min spoil the chicken or should I be OK?  Don't want to eat them if they are going to be bad.  Never had that happen with the WSM and couldn't get it under control.  Thanks in advance!

    Do you know the temp. of the meat ?
  3. I'm showing 140F right now on all of the legs.  It has been at 250F for roughly 30 mins now.

    Refresh me a little How long has the chicken been on ?
  5. 4:00 - Chicken went into smoker.  170F.  Normally wait until 235, but wanted to beat the storms.  Had immense rain and wind.  Temp never got above 190F.

    5:30 - Smoker Temp 190F.  Added another fully lit batch of charcoal to kickstart it.

    5:45 - Smoker Temp 245F

    6:15 - Smoker Temp 242F. Meat temp 140F

    Temp of chicken will cruise up to 170° fast

    I think your OK!

  8. The chicken went in cold as I didn't have time to let it sit a bit to bring up temp.  So it went from cold to 140 in 2 hr window. 
  9. You went through the danger zone in 2 hours. You'll be fine.
