Been using several different snack stick kits what's everyone's favorite that gets closest to original pepperoni flavor?
Usually make 5lb batches how much encapsulated citric acid for a five pound batch...i

Here's a thread I did on Pepperoni . I've made several atempts , and Rick's formula is the only one I've done that actually taste like pepperoni . There's a link to his original thread in there as well .
I don't use ECA , so can't help with that other than follow the directions .

Pepperoni recipe

Does anyone have a favorite pepperoni seasoning they use? I have tried a couple pre made ones but to me they lack flavor.

I get pretty much everything (casings, seasonings) from OwensBBQ.com ...They have some damn good snack stick seasonings... 7 Pepper being my favorite... Also, He's a member here ...

If you do order from them... Pick up a little bottle of Tatonka Dust... OMG is it ever some good rub... Especially on chicken...

Has anyone used like McCormick packets or other brands along that line to season meat sticks before smoking? Been looking at seasonings lately and a lot of them I used to use went way up in price and the shipping is crazy. Don't have anywhere local where I can purchase them. If so which ones...
