Been using several different snack stick kits what's everyone's favorite that gets closest to original pepperoni flavor?
Usually make 5lb batches how much encapsulated citric acid for a five pound batch...i

Here's a thread I did on Pepperoni . I've made several atempts , and Rick's formula is the only one I've done that actually taste like pepperoni . There's a link to his original thread in there as well .
I don't use ECA , so can't help with that other than follow the directions .

Pepperoni recipe

Does anyone have a favorite pepperoni seasoning they use? I have tried a couple pre made ones but to me they lack flavor.

Thx I guess I need to be a little clearer I have that recipe for the Pepperoni...
Looking for a good snack stick recipe or spice kit....
