Question on turkey cook temp in MES 30

So I've got a 20 lb turkey I want to smoke for Thanksgiving. That said, how should I cook such a big bird in my MES 30 considering my cook temp only goes up to 275 degrees? Obviously, I don't want to mess around with the "Danger Zone". Any and all help would be appreciarted. Thanks!
 
I'm not a big "Bird" person, but I would suggest spatchcocking that bird, if it's going in an MES 30.

Then if it's too big for one MES 30 grill, use the top two. I would then switch them half way through.

Yankeejoe, IMHO, I would disassemble the bird and smoke it in pieces,same destination and no temp. worries.

I like the breaking down the bird idea.  at the end of the day you are doing that anyways
