question on my amazing amaz-n smoker

order one of these some time ago  and just now put it to a test run. filled two rows of the three with pellets plus some hickory chips down each side. fired it up about two pm and at ten that night it was still going strong. today i just used the pellets and fired it up around 3 pm and as of right now it is still going strong. it looks like a light blue smoke. my question is can i smoke a boston butt and not add any chips via the tube in my mes30. will this be enough smoke to put a good bark on my 7 pound boston butt...

I get about 9 to 11 hours of smoke from a full AMZNPS depending on how full I fill it.  

If I was using the AMZNPS - I would not use the chip feeder at all.

BEWARE! If you fill it too full the embers will jump to the next track and you will have 3 rows smoking...too much!

Lastly, I am not sure you gain much smoke flavor much after 3 or 4 hours...if it is oversmoked, it will be bitter.

I get bout 12 hours smoke out of a full tray.

Yes it will be enough smoke with out using chips.  I have never used my chip loader.

I use mine for cured meats.  I smoke the whole time.  I dont believe in the " wont take smoke after 4 hours"  talk.

i am with you guys. just went out there, the smoke is still going good and when i opened the door smoke billowed out. a few hours of that should be plenty. may even just load one row. that way should only get about five hours. gonna put one on in a couple of days and hopefully be back with a good report and some pics...

Ancient post suckered me right in! Oh, well...

Depending on how dry your pellets are, which pellets you're using, your elevation, humidity, etc., you will need to experiment to figure out how deep to fill the tray, figure out how fast it will burn, and therefore, how much you need to fill the tray for any given length of time you want to have smoke.

I never use the MES's built in chip smoking gadget. In fact, I took all of that stuff out of my MES because I only used the Amazin pellet maze tray after I got it and found out how much better and easier it was.

I normally fill the tray completely only when doing very lengthy smokes, like pork butts which can take 12 hours or more. For shorter smokes, I fill less of the maze, as needed.

You can control the rate of smoldering of the pellets by adjusting the airflow through the smoker. I am at a high elevation, so I normally have the top vent fully open and the chip loader completely removed. If I do want to slow the burning, I normally do that by inserting the chip loader and adjusting how much it chokes off the air entering the smoker rather than shutting down the top vent.

But actually, even though it's very dry here most of the time (I'm talking 8% or so), my pellets seem to absorb moisture rather than dry out. I have to bake them right before using them, or bake them and put them in a Mason jar while they're still hot if I want them to burn here. They must be extremely hygroscopic.
