I made up a batch of pops breakfast sausge but its a bit salty for me so i wanna cut it down a little.
8oz salt
2oz black pepper
1oz sage

Now i was thinking that i would cut the salt down to 6oz but i dont want to trash the batch i have i just want to add more pepper and sage to get the same ratio as if i used 6oz of salt.

So if i added 1oz black pepper and 1/2oz sage would that be about right?

Let it sit for a week....it mellows!  I thought the pepper was too much...then a week later cooked some.  It was right on perfect!

I would just add more meat.... its better to under season than to over season in my opinion
