When I run through the first time seasoning of my new MES - do I need to let it cool down like it says in the manual before cooking?

I'm wondering if I can just throw my food in once it is done and cook it rather than turning it off, waiting for it to cool, the pre-heating it again.

Thanks!

When in doubt...follow the manual.....LOL. There must be a reason, maybe. I know when I seasoned my new smoker, not a MES, I popped the door, let it air out then wiped out the inside with a mild cleaner and paper towels just to be sure there was no oily residue left from the burn in. Did it do any good??....hard to tell, but I felt better about it....Willie

I am not sure why it says that....but like Chef Willie says....when it doubt, follow the manual.
