question for vert. smokers

when smoking lots of different meats like ribs, chicken, fatties, abt, butts all at the same time what order do you stack em in? and do you put something down on the racks so the foods don't drip on each other?
 
Lenny chicken or poultry in general always goes on the lowest racks so it doesn't drip on other meats. Other than that its a matter of personal choice. Fatties, ABT's and Butts are all gonna drip pork fat so its all good

the biggest thing I do is to put the chicken on the bottom. The rest I have never been super concerned with what goes where. Not sure if thats the right thing to be doing but I do know that chicken is on the bottom.
 
I think Poultry is your only concern of where it goes. Not quite sure why that is, but everyone says it needs to go under all other meats. I never really understood why that is though... Anyway, It's what I do because I read it here and fugure it MUST be right...

Chicken on the bottom, always. Chicken is full of nasties and the threat of cross contamination is too high to take chances with. If you have ever witnessed anyone with food poisoning due to Salmonella, E-coli or listeria or a host of others it isn't pretty.
 
You just haven't had bird that's been cooked with a butt and a couple of fatties drippin on it for a few hours. At first I did it for the cross contamination issue..... now I do it for the smile it puts on my face.... the greasy smile....! You'll know what I'm talkin about after the first one.
