I used my new igrill on Boston butt in MES today and worked great. However when I have tried it with steaks on propane grill, I get very inconsistent readings. Are these probes designed to be left in steaks when cooking on grill with 350_400 degree heat?

If both are IT probes, then I assume they would stay in the meat until it is done.  I have one but the signal strength for me is very weak.

Careful -- the probes are only rated to 400*.  Searing steaks can get higher and they are especially at risk if the cable is routed over an open flame.
