if I am afraid my wood chunks will ignite,can i just make a "foil pouch" with holes in the top for the smoke?
 
I have seen folks use a foil pouch for chips, sawdust, or pellets but not chunks. Having said that I don't see why you couldn't. But if you are cooking with an air starved "fire" (aka "smoking") your wood won't burn. It will smolder producing flavorful thin blue smoke.
