My quest continues. Have made number of attempts. Some better then others. The bad ones were as much my fault for non paying attention to process and not being keen on the spices used. So when i came across Disco's recipe that he kindly shared here i gave it a go. And am glad i did!
Just a small trial. 1lb.pork and 1lb.beef and the spices.
Here is the result. 2 small chubs .
And here is the result after a rest in the fridge.I must say this is one of the best if not THE best tasting sausage yet. Well worth the effort and am sure to be making more shortly. I would encourage everyone to give it a go. Thank you Disco.
