Queso con Pollo

[Quiganomics]

Kids are tired of Taco Tuesday but still wanted Tex-Mex. Pulled out some chicken breasts from the freezer, marinated them in some chipotle w/adobo, lime, onion, garlic, and a touch of oil for a few hours. Tossed them on the smoker and made the queso while the wife made some rice and fajita veggies. I'd say it was a hit, no leftovers and the youngest wanted more.

The dish:

And as a side note, I seem to be doing ok cutting out most of my soda intake replacing it with water...the water just needs to be carbonated.

Right? I could eat tacos every day and be happy. Very happy.

Beats my taco Tuesday
We stopped at Del Taco for lunch

Nice,that looks tasty, Shaun.

Have you tried a splash of fresh juice in with your water?

I used yo drink soda every day, and didn't care for plain H20.
I got over it by adding just. 1/4 glass of lemonade, orange, or watermelon juice to my water. I love it, and still drink it almost daily. Fresh Watermellon juice from the Mexican store near me is my favorite. I buy it by the gallon most weeks.
