All righty then......Since my last no foil ribs didn't actually happen because I didn't post pics I figured I'd make up for it this time. Friday I smoked a brisket and 2 racks of ribs and they turned out delicious but there were hardly any ribs left over for the cook

. We are getting together with my brother and his family tomorrow so I figured I would supply the meat. 3 more racks of ribs to be reheated on the grill tomorrow at his place.

For your viewing pleasure I took many pictures of the process so those not fortunate enough to be running their smokers today can get their fix.

I started out with 3 racks of ribs from wally world.

Maybe not the best choice for the ribs but I've been having good luck with these.....

Rubbing them and stacking them in preparation for a night in the fridge......Using sweet and smokey rub

About 1/3 of a chimney of lit coals to get the ball rolling......

I'm not sure if this is enough food for everyone tomorrow so I'm also taking the brisket point from the other night. I chunked it up and am mixing it with some BBQ sauce to also be heated up on the grill tomorrow.

Stay tuned for the finished product......

The prices are nuts!!!!!

You have peeked my hope in Smokers , Damon. Smoking with no foil makes for a better Bark, makes the Bend test easier and yiou can see the 'sweat' on them when they are done...

There is no sauce on here , it is only the 'sweat'(moisture) from the Ribs... these were nice and juicy...

 225*f for 5.5hrs.

The last one just finished up. A little sampling of each one proves that they are all perfect. Sweet and smokey rub, one mopped 2 times with sweet baby rays, one mopped 2 times with Sticky fingers Carolina Sweet and one left with just the rub and spritzed 3 times with sunny d. They finished up at different times. The first one came off in 5 hours, the second in 6 hours and the third in 6.5 hours.

They are all resting in the cooler as I type. No eating them until tomorrow at which time we'll reheat them on the grill. We are having left over brisket from Friday tonight! It is great reheated in the frying pan.
