What’s up, i just got a new masterbuilt electric smoker and looking to a do some pork butt tonight. I was wondering if I’m able to get a nice bark like I did on my offset smoker. The bark is almost a make or break for me.
Also should I use water or juice in my tray? Any advice is appreciated!
 
Fill your tray with sand and cover it with aluminum foil. I've never once used water in my masterbuilt. There's just no need.

you can get a very nice bark with that smoker, just make sure to go unwrapped the whole time.
 
Like @fivetricks said no need for any liquid in the pan the MES is plenty insulated. I smoke butts in my MES all the time and never had a problem getting great bark. Just don't wrap and let it ride to 205.
 
When I first started smoking meat, my first smoker was an MES & I never had any trouble getting good bark on a butt. But as said above I wouldn't wrap it & just let it go uncovered until the IT hits 205+. That old MES put out a lot of good Q! I still have one, but I just use it for sausage now.
