So I made a planned leftover dish tonight for dinner. I made a beer a cheddar soup the other night for dinner. What is lovely about the soup it has bacon...... had a bit of pulled pork, broccoli and potatoes left from other meals. So why not? :dunno

Lets get to the good stuff....

I cut a wedge out of the potato and did some cross cut partially through. Drizzled with EVOO and dusted with SPOG. Baked at 375 till tender.


I reheated some pulled pork I had roughly chopped. Slightly spread open the potato and filled with the pork.
Note: I usually drizzle the BBQ sauce at this time. But I got into the photos and forgot too.



I steamed some fresh broccoli and added it to the potato.




Now for the beer and cheddar soup.....



A bit of fried onions to top it off....



OOOPPS.... forgot something... the BBQ sauce....

That is to fine a meal for a paper plate!

Thank you. Long story with paper plates. When I got together with my wife. All she and my step son used was paper plates. I tried to get them to use china plates and was told those are for fancy dinners, we just eat regular stuff. So instead of fighting it, I rolled with it. Very short version.....

That's quite the loaded tater! I'd say I'd take two but I think one would almost be too much!

Thank you. We have made these a few times before. Each time the potato is not the only thing stuffed. I started with big baked potatoes and now are down to much smaller ones. The one in the picture was about the size of an iPhone 5. For me it was a perfect size, the wifes was smaller. We also had a good sized salad with it. So unless you are getting ready to take on Joey Chestnut or prepping for a Man vs. Food episode, one should be fine for the average person.
