I made a new recipe tonight. It was delish! Love by all.

Pulled Pork Stuffed Avocado Boats that is a good start of a recipe for sure! Mods would be easy and welcoming for sure. the recipe says 1/2 of one is a serving...not so much....we both ate a whole avocado and I could have had more...tho I was a touch short on pulled pork.

I used blue cheese instead of ranch - not a huge ranch fan...but blue cheese...YES!

Wow. Nice. We been getting them for $1 a bag. I threw in freezer to see how that works. Now I know what to do with them.

Yup giving this a go, love Avocado. Wish we got them cheaper, on sale is 3/$5!

I added sautéd onions and jalapenos to the pulled pork. But I think almost anything would work. Baking them at 350 for 20 minutes really made the avocados come to life!
 
I had to give you a like for plating very nice as you could figure I am not into Avocados

Man those are awesome! Sure wish avocados were cheap here. Usually close to $1 each. Wife and I both eat them weekly in some manner.

Never thought about baking them.
 
I have halved the avocados with salt and pepper and filled each half with an egg (mostly the yoke) then bake. I agree I like the change in texture and taste after baking.

funny, I saw this recipe on Instagram and then started searching for stuffed avocados and that led me to the pulled pork. I always thought a cooked avocado would be turn brown like it does in the refer overnight. But they really are great cooked!
 
I have some beef short ribs doing a 72 hour @131 in the SV now. I am now going to pull the ribs and fill some avocados and bake for dinner tomorrow.
