Here is my cook from yesterday.

Nothing fancy, just pulled pork sandwiches, coleslaw, and baked beans.

Like some said on my last cook keeping it simple is sometimes the best. And the pork came out great. This is probably my 5th or 6th butt and they somehow keep getting better.

One new thing I tried is chopped up wood chunks in the smoker box instead of just wood chips. Was a way better smoke.

For this cook my wife wanted to get involved so she did the rub prep on the butt.

Here is the 10 lb. butt out of the fridge after marinating all night with Jeff's rub.

Here it is at the 4 hr mark. Dropped it at 4:30AM

And this is just before pulling it to rest at the 10 hr mark. Temp probed like butter...you can see the bone sticking out on the right.

My wife helped with the pitmaster duties, as well, like checking grill and meat temps as well as spraying with apple juice after it got past the stall.

Here it is rested and ready for the "Pull"

It had a fantastic bark, and now the bone is obvious, and pulled clean as a whistle.

Here it is pulled with the bear claws.
